Bulgur salad

Last week a I walked around the ”world food” section in a supermarket. I was looking for mung beans and by mistake I saw the bulgur. I took a bag in my hand, read the labels, but I just put it back. I heard about it, but I was never sure if I really wanted to try it.

In the morning, if I switch on the TV, for sure I watch the Paprika programme (it’s a tv programme from my country, about cooking).
And guess what? There was a bulgur salad recipe on, which convinced me.  But I was curious to see what exactly the bulgur i, so I checked.
If there is someone else who doesn’t know what it is, I will write it down. Bulgur is a cereal food made most often from durum wheat. Because of its high nutritional values, it can be a substitute for rice and couscous. It’s a good source of fiber, protein, iron and vitamin B-6. Eating whole grain food, including bulgur, may lower the risk of developing cardiovascular disease, according to the Harvard School of Public Health. Now, I was more convinced. In about half an hour I was on my way with my daughter, Maya to the supermarket. And because today she was very quite sitting in the shopping cart munching some biscuits, I had time to look around more, and buy some more spices. I dropped some more fresh vegetables in the cart, and I was ready to go home, for a new adventure in the kitchen.
As I saw it this morning, the bulgur needs to be soaked for 20 minutes in cold water.
Ingredients: bulgur, 2 tomatoes, half cucumber, 2 spring onions, the juice of a whole lemon, 1dl of oil, zest of half lemon, freshly chopped parsley and mint leaves.

My bulgur soaked for one hour. I tasted it meanwhile. I tried to get used to the taste. When it became really soft, I drained it. I chopped the vegetables, I unseeded the cucumber before chopping it. I mixed everything with the bulgur. I mixed the oil with the zest and the lemon juice, added salt and poured it over the salad. The last touch is to add the chopped leaves. Stir it. The salad was a surprise. Very fresh, very tasty. Can be served with any kind of steak too.
