This soup is one of my children’s favourite, because of the shape of the peas. They say the peas look like small balls, so it’s real fun to eat them. And everytime they shout: gooool!!!
Ingredients: 1 carrot, 1 parsley root, a small spoon of flour, oil, a small spoon of paprika, frozen or fresh green peas, fresh chopped parsley leaves. For the dumplings: 1 egg, a pinch of salt, a small spoon of butter, flour.
Chop the carrot and the parsley root. Heat a spoon of oil in a saucepan and add the vegetables. Stir them for a couple of minutes with a wooden spoon, add the flour and the paprika. Stir them for one minute, then add 1 and a half liter of water or chicken stock. Add salt. When the vegetables are almost cooked, add the green peas. It depends on you how much you will add. Some of us like the soups dense, some of us not. I like it dense.
Meanwhile we will prepare the dumplings. Beat the egg, add the butter, a pinch of salt and slowly add the flour, mixing it with a fork. When you get an elastic dough, and not too sticky to work with, then simply tear pieces of the dough with a smaller spoon and put it straight in the boiling soup. In 5-8 minutes they are ready.
Just add some fresh parsley to your soup before serving.
