Stuffed cannelloni in mushroom sauce

Sunday it’s the hardest day of the week for my family. Other families are spending the day together,  but we can’t.  My husband works night shifts at weekends. We wake him up only at lunch time. After enjoying lunch together,  he spends about one hour more with us.  

Cooking lunch is a bit harder, because I have to look after the children, too. The Sunday lunch is always freshly cooked.  Usually I cook the soup, for two days,  but Sunday we never eat what is over left from Saturday. I feel like this day is more special than the others.  We are have chicken broth, or vegetable soup, steak or some specialty.

Yesterday my son asked for some paper boxes. In the morning my husband brought them two, so the kids would not fight for them. And thanks to the boxes, at 9 a.m, we were already in the kitchen,  preparing the lunch. I knew I had time,  the boxes will keep them busy for a while, so I had time to try something new.

First I prepared the soup,  then I continued with the main course. I knew this would take time.

I was looking for conchiglie pasta, I wanted to fill some shells, but I didn’t find, so I bought cannelloni instead.

I cut about 200g of chicken breast into small pieces and fried them in a bit if oil. I blended it together with an egg and herbal cream cheese, seasoned with salt and pepper.
I cooked the pasta al dente. I think you should cook only the amount what you think you would eat, plus 2-3. I cooked 10, but 2 broke, so I cut them.

I cleaned 10 pieces of champions,  I chopped them together with 3 spring onions,  and I fried them a bit, then I added a bit of cold water, just to cover them, and cooked it for 10 minutes, seasoned with salt and pepper and blended it. I added 100g of double cream, and a small bunch of fresh chopped parsley. I poured it in an ovenproof dish.

I stuffed the cannelloni with the chicken mix, put them in the mushroom sauce. I added the broken and chopped pasta too. I grated cheese on the top and in a preheated oven, 220 degrees, I let it for 15 minutes, basically for the cheese to melt it on the top.

It was really really tasty. For sure I will prepare it more often. I will try it with minced meat and other kind of sauces.
