Pork fillet in mustard sauce

Yesterday my husband went for the weekend shopping to the supermarket and he bought so many kind of meat, that I really had to think how I would organise the cooking and what needed to be cooked first. He is working now everyday, so the next weekend he can get off, and hopefully, if my son is getting better from his tonsillitis, we can go somewhere for a short trip.
Since we have lived in England we have almost never bought frozen meat, especially that we live 5 minutes away from a supermarket and 5 minutes away from a Halal. I like buying meat from Halal too, it’s fresh all the time, just because of their religion they don’t sell any pork. It’s fine with me, we mostly eat chicken and turkey. But now I made the main course from pork, but I bet it’s really tasteful if it’s made with chicken or turkey too.
I decided to prepare the pork fillet first, it really looked appetizing I wanted something with sauce and I started to search for a good recipe. I saw some with mustard sauce, so I decided to do so, but I change something…. according to our taste, and especially the kids’ taste….. I cut 8 slices from the fillet, washed them, tenderized and seasoned them with salt.
In a pan, I added a bit of oil and fried them. I mixed 5 spoons of sour cream in a bowl, 3 spoons of classic mustard, thyme, a pinch of salt. I poured the sauce into an oven proof dish, added the meat slices, covered it, and put it in the preheated oven, 220 degrees, and let it for 15 minutes. I found my sauce too fluid, so I added a bit of flour to make it more creamy.
I served it with tagliatelle and pickled cucumbers.
