Eggplant
Eggplant can be prepared in several ways. We have two favourites. One can be made for breakfast or dinner, the second one especially for an easy lunch.
Eggplant salad
Ingredients: 4-5 egglants, homemade mayonnaise, salt, a small red onion.
We bake the vegetables, if we have the possibility then outside on a grill, if not on the hob (you place an aluminum foil to don’t make a lot of mess, as soon as a lot of water will come out). When they are baked, we clean them. It’s easy if you peal the half of it, then with a spoon you take out the rest.
I chop it, add the mayonnaise, salt, grated (on the small grater) onion. Mix it.
We spread it on bread, serve it with salads or just tomato!
It’s wonderful.
Eggplant in” coat”
I wash a big eggplant, cut it in tiny slices, and season it with salt. Leave it like this for 1 hour, so the water comes out from them. Then I use three plates. In one I put flour, the second one bitten egg, the third one breadcrumbs. And this is the way how I will prepare them, roll them in every plate on both sides in this order: flour, egg, breadcrumbs. I add oil in a pan, heat it, and fry them.
They are wonderful. If you want you can bake them in the oven, without any oil.
