Sometimes I feel like eating something very light and colourful. I bought some rice noodles and I always have a lot of vegetables at home, so I just needed to combine.
Ingredients: 250 g of rice noodles (or any kind), 2 carrots, 2 spring onions, few broccoli flowers, 1 smaller courgette, 15 g of chicken breast.
I cut the chicken breast in tiny slices and in a wok I fried them, adding just a few drops of oil. When it was nicely fried I took it out. I cleaned the carrots and sliced them in julienne, chopped the spring onions, courgette in cubes. I put them in the wok, together with the broccoli, stirred them in the oil which remained from the chicken. I poured just a bit of water on them and let them on until they were half cooked .
I mixed 2 spoons of oyster sauce with 2 spoons of Worcestershire sauce. I prepared the noodles as indicated on the package. In a bigger bowl I mixed everything, pouring the sauces on the top. I didn’t add much salt while cooking. The sauces are salty. It is better to add more in the end if needed.
You can prepare it only with olive oil, or soya sauce, or add chillies.
