Cream of broccoli soup

I don’t prepare it too often, this “too green soup”, as my son calls it. Even though I should. I’m aware of  its anti cancer properties, also that it has a lot of vitamins, but because of its intensive colour is really hard to convince the kids to eat it.

 
Ingredients: 1 broccoli, 2 medium potato, 3 garlic cloves, salt. For serving grated cheese and croutons.

I cut the broccoli into florets, I use the young stalks too. I clean and cut the potatoes and garlic. In a sauce pan, in 1,5 l of cold water or chicken stock, I add all the vegetables and start to cook. II season with salt. If it don’t feel the garlic taste, I put some more. In this soup I really like its taste.

When ready, I blend the vegetables, add sour cream. And ready to eat!!!

When serving I add grated cheese and croutons.
