Carrot, orange and avocado salad
Yesterday a bought the April edition of the BBC Good Food. I found a lot of healthy salads in it. Today I tried the first one, which I liked. I changed the original recipe only a bit, I used romaine lettuce instead of rocket salad and I made a smaller quantity.
Ingredients: 1 romaine lettuce (70g rocket salad), 2 carrots, 2 oranges, one for the zest, 1 avocado, 1 tbsp olive oil.
I cleaned the carrots, cut them halved lengthways and sliced them with a potato peeler. I cleaned one of the oranges and took the slices apart. Cut the lettuce into tiny slices. I mixed the orange zest with the olive oil. I peeled and sliced the avocado. I put everything together in a bowl, I tossed the zest through the salad.
I served it with grilled chicken breast and rice. It was really nice, even though few years back I would never mix a vegetable with a fruit in the same dish. Our traditional kitchen is more limited. But now I’m more open minded to try different dishes.
