Laura’s ceviche

Finally my husband was off this weekend. Events like this happen once a month. So we have to enjoy it to the maxim.
Yesterday there was a very nice spring weather, 17 degrees. Sunny, just wonderful.
We visited the flower market on the Columbia Street with our friends, it is just amazing. Then we came home to cook and grill some Mexican and Romanian traditional dishes.
My friend thought that it would be nice if we had sometime ceviche, so she prepared it in advance. She was right. It was really nice!!! She grilled some pitta bread, and we finished the whole bowl before lunch.
Let’s see what is the ceviche actually. It is a very popular seafood dish in America, especially in South and Central America. The magic of this dish is that is made of raw fish cured in citrus juices. We can also add chopped onions, coriander.
This time Laura added more ingredients, and it was fabulous. I don’t eat seafood, but she chopped the  shrimps so small, that I didn’t even notice their taste.
Ingredients: 1 avocado, 1 chilli, 3-4 tomatoes,  juice of a lime, 1 cucumber, 2-3 spring onions, 100 g salmon fillet, 1 smaller smoked trout, 100 g cocktail shrimp, salt, pepper, a small bunch of coriander.
Of course it is not mandatory to use so many kinds of seafood. If you want to use only one I recommend the smoked one….
You don’t need to do a lot of work, just chop everything. And season with salt, pepper and lime juice. If you like it more spicy, just add more chillies.
Serve it with grilled pitta bread, tortilla chips, grilled wraps!!!
